Thymiopoulos family has been involved in agriculture and grape-growing in the village of Trilofos for generations. Apostolos Thymiopoulos was the first one to vinify the family grapes when he was studying oenology. In 2005, he produced his first wine named “Earth and Sky”. He is an advocate of sustainable viticulture and minimum intervention winemaking. This is his common attitude in his ten different expressions of Xinomavro, the renowned variety of Northern Greece, trying to reveal its full potential. Thymiopoulos Winery is located in Trilofos, a village in the foothills of Vermio Mountain. The vineyards are in perfect harmony with nature, offering wines that reflect their origin. This is the real link between the winemaker and nature.
Throughout the winemaking process, Thymiopoulos does its best to render the original expression of each vineyard and vintage. Choosing the right time to harvest allows the producer to have perfectly ripened, small-berried and well-aerated, healthy grape clusters. Destemmed or not, grapes start to ferment spontaneously with local yeasts. Meanwhile, a long maceration period starts after which the wine is transferred into large oak casks. The goal is to craft pure and authentic wines, not overwhelmed by the impact of any vessel. Minimum intervention during the whole vinification process and “élevage”, allows the producer to bottle an authentic expression of Xinomavro reflecting its origin. Apostolos Thymiopoulos devotes himself exclusively to Xinomavro, the emblematic variety of the Naoussa region, expressing “terroir” as well as the craftsmanship of the “vigneron”. Xinomavro doesn’t leave room for mistakes, either in the vineyards or in the winery. Whoever respects the variety can get acid, tannic yet ethereal, long-lived wines with a distinctive aromatic profile.
